THE STORY
This is a FTO coffee from a cooperative called Twongerekawa Coko in Coko sector, Gakenke district, in Rwanda’s norther province. The coop works with 1200 local small farmers, each with an average of 1.3ha in size. Gakenke district is near Volcanos National Park, and is exceptionally beautiful.
Ripe cherries are carefully selected, first by hand and then floated in tanks. Cherries are then de-pulped and dry-fermented for 12-18 hours, before being pressure washed and graded further with running water channels. The washed coffee is then sun dried on raised beds for 14-21 days, depending on weather.
